Peeling boiled eggs have long since been a pain in the behind for me. I always had the hardest time peeling them if I let them cool before I attempted to or ended up burning my hands if I attempted the “hold them under running water while you peel them hot” method.
I finally found a [...]

I was 35 before I ever had “stuffing” and then, it was Stove Top. I’m at least the 5th generation of my family to serve dressing instead of stuffing. Who wants to cram their hand up a turkey’s butt anyway?
1 10-inch pone of cornbread (see recipe in Breads)
5-7 biscuits (see [...]

Don’t let the word squash make you cringe. This recipe has enough other stuff in it, you won’t taste much of the squash.
1 1/2 quarts frozen squash, cooked, drained and mashed
2 eggs, beaten
1 medium onion, finely chopped
1 regular size can of Cream of Mushroom soup
2 slices of white bread, cut into 1/2 [...]

Some call it a casserole, some call it a souffle. I heard once that if it had eggs in it, it was a souffle. Who knows, I mainly call it good.
3 cups cooked, mashed sweet potatoes (Save yourself some trouble, use one 40 ounce can of cooked sweet potatoes!) Either way, [...]

Biscuits intimidated me when I first started cooking. My mom can make beautiful biscuits by hand without rolling them out and cutting them. I still can’t. I remember her literally laying her head on the counter and laughing at my first attempt at making them. Oh well, I still can’t pinch, roll and flatten by [...]

I guess cornbread varies by region as far as taste and texture. I’ve eaten at many “southern cuisine” establishments, but their cornbread is never anything like any homemade cornbread I’ve ever had. Homemade cornbread in these parts is never sweet and never has a cake-like texture. I’m not sure where those recipes came from, but [...]

Really good Macaroni and Cheese is when there’s an abundance of cheese. I’m not really sure if you can put too much cheese in it.
1 pound elbow macaroni, cooked according to pkg. directions
1 stick of margarine
8-10 ounces of evaporated milk
salt, pepper
3 eggs, beaten
cheddar cheese, lots and lots of cheese (I generally use at [...]

The Thanksgiving turkey doesn’t have to be such a chore. Basting and all that other stuff isn’t necessary for a moist, delicious bird, nor is fancy cooking equipment. One of the most important parts is choosing a turkey that is under 20 pounds. A 15 pound average bird has always served 12 or more at [...]
