Pina Colada Salad

1 2/3 cup boiling water
2 (3 ounce) packages of Pineapple-Orange Jell-o (Or 1 package of each flavor)
1 (6 ounce) can of frozen Pina Colada concentrate
20 ounce can pineapple tidbits, drained RESERVE the juice
1/2 cup coconut
Pour boiling water over jell-o, stirring until jell-o dissolves.  Stir in pina colada mix and pineapple juice.  Chill for 50 minutes, [...]

Toasted Pecan Pudding

1/2 cup margarine, melted
1 cup plain flour
1/4 cup packed light brown sugar
2 (3 ounce) packages instant vanilla pudding mix
3 cups cold milk
1.5 cups coconut
1 cup chopped pecans
1 (8 ounce) container Cool Whip
Combine butter, coconut, flour, pecans and sugar.  Spread on ungreased pan and bake 30 minutes at 325*, stirring occasionally until lightly browned.
