Chicken Casserole

You can find a gazillion chicken casserole recipes on the web.  Mine is taken from one of them and tweaked.
2 chicken breasts, cubed
1 small onion, diced
2-4 tablespoons olive oil
garlic powder to taste
black pepper to taste

Grilled Salmon

1 pound salmon fillets, fresh or thawed if frozen
1/2 teaspoon garlic powder
1/3 cup soy sauce
1/3 cup water
1/2 teaspoon of Lemon Pepper (I prefer closer to 1 teaspoon)
salt to taste
1/2 cup light brown sugar
1/4 olive oil
Stir together all ingredients except salmon until sugar and spices are dissolved.

Shrimp Alfredo

But instead of using cooked chicken, use shrimp. 1-2 pounds of fresh, peeled, deveined shrimp sauteed in olive oil until just pinkish-orange gives you another simple, yet tasty dish.

Zesty Shrimp Skillet

4 slices bacon
1/2 cup Italian dressing
1 onion, halved and sliced
garlic powder to taste
1 pepper- mild jalapeno, bell pepper, hot cayenne- your choice
15 ounces of tomato sauce
1 tablespoon chili powder
1 pound peeled, deveined shrimp
4 cups hot cooked white rice

Thursday, February 22nd, is National Chili Day.    Celebrate with a pot of your own.
2 lbs. ground beef
1 onion, chopped
1 1/2 large cans of tomato juice
2 cans of pork and beans OR 1 can pork and beans, 1 can kidney beans
salt, pepper, chili powder to taste
ground cumin, optional

Quick, easy and cheaper than take-out.
1/2 – 1 lb. cheap steak (I like to use “breakfast steak”, as it’s already sliced thin)

Cajun Smothered Chicken

The basis of this recipe was recently posted on MSN.  I changed it around to suit me a bit more though.
4 boneless skinless chicken breasts (or 8 good sized tenders)
2 tablespoons canola oil
2 tablespoons margarine

2 teaspoons Cajun seasoning

Tortilla Soup

1-2 pounds boneless, skinless chicken (tenders or breasts)
2 14.5-ounce cans stewed tomatoes
2 14.5-ounce cans black beans, undrained
1 4-ounce can of chopped green chilies

Beef Stew

Stew that sticks to the ribs for cold evenings and a way to give left-overs a new life.
