Tried this at a cafeteria last week and loved it. It’s too sweet to eat on it’s on, or so I was told, but it’s a fantastic side dish. I googled it, then changed it to suit my taste.
1 head of broccoli, chopped (if you have a hard time chewing raw broccoli, chop [...]

Rutabegas are best when a bit on the small size. Softball sized is about the best size I found for the best flavor and texture. Bigger rutabegas tend to be a bit grainy or stringy. Peeling them can be a real tough job, so I tend to let my husband do it. He has stronger [...]

Not a creation of my own, but one too good to not share. This salad makes an excellent side to ham.

1 can condensed milk
1 cup chopped nuts (I use pecans)
1 large can crushed pineapple, drained
1 large container of Cool Whip
1 can fruit cocktail, drained
Mix pie filling and [...]

I hate left-over mashed (or creamed) potatoes. No matter how you reheat them, they never are quite that great. My Grandmother didn’t believe in wasting anything, so she’d take those left-over mashed potatoes and turn them into a tasty treat- albeit, probably an unhealthy sidedish.
1 1/2 cups cold mashed potatoes
3 eggs, beaten
1 small [...]

Don’t let the word squash make you cringe. This recipe has enough other stuff in it, you won’t taste much of the squash.
1 1/2 quarts frozen squash, cooked, drained and mashed
2 eggs, beaten
1 medium onion, finely chopped
1 regular size can of Cream of Mushroom soup
2 slices of white bread, cut into 1/2 [...]

Some call it a casserole, some call it a souffle. I heard once that if it had eggs in it, it was a souffle. Who knows, I mainly call it good.
3 cups cooked, mashed sweet potatoes (Save yourself some trouble, use one 40 ounce can of cooked sweet potatoes!) Either way, [...]

Really good Macaroni and Cheese is when there’s an abundance of cheese. I’m not really sure if you can put too much cheese in it.
1 pound elbow macaroni, cooked according to pkg. directions
1 stick of margarine
8-10 ounces of evaporated milk
salt, pepper
3 eggs, beaten
cheddar cheese, lots and lots of cheese (I generally use at [...]
